OATMEAL - WHOLE WHEAT CAKE 
2 1/2 c. boiling water
2 c. rolled oats
1 c. butter
2 c. dark brown sugar, packed
1 c. honey
4 eggs
2 1/2 c. whole wheat flour
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla extract

Pour boiling water over oats and let stand for 10 minutes. Grease a tube or fluted cake pan. Preheat oven to 350 degrees.

Blend together butter and brown sugar until fluffy. Add honey in a thin stream, continuing to beat rapidly. Beat in eggs one at a time. Beat thoroughly after all eggs are added. Stir in flour, salt, soda, cinnamon, nutmeg and vanilla. Stir in oatmeal mixture.

Turn batter into prepared pan. Bake at 350 degrees for 1 hour and 10 minutes. Leave cake in pan on rack for 10 minutes. May be served plain, or lightly dusted with confectioners' sugar or with applesauce.
