STRAWBERRY WALNUT BREAD 
2 c. finely chopped walnuts
3 c. all purose flour
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. ground cardamom
1/2 tsp. salt
1/4 tsp. ground nutmeg
4 beaten eggs
2 c. sugar
1 1/2 c. mashed strawberries (about 3 c. whole berries)
1 c. cooking oil
1 c. mashed banana
1 tbsp. finely shredded orange peel

Grease and flour 2 (9 x 5 x 3-inch) loaf pans. Sprinkle 1/2 cup of the walnuts in the bottom of each pan. Set aside.

In a large mixing bowl stir together flour, cinnamon, baking soda, cardamom, salt and nutmeg. In a medium mixing bowl stir together eggs, sugar, strawberries, cooking oil, banana and orange peel. Add to flour mixture, stirring just until dry ingredients are moistened.

Carefully stir in remaining nuts. Transfer batter to prepared pans. Bake in 350 degree oven for 1 hour or until a wooden toothpick inserted near center comes out clean. Let cool in pans for 10 minutes. Remove loaves from pans. Cool completely on wire racks. Wrap and store overnight before serving. Makes 2 loaves.
