FRUIT PILAF | |
1 c. rice 1 onion, chopped 2 tbsp. butter 1 tsp. salt 1 can chicken broth, plus wafer to make 2 c. 1/2 tsp. coriander 1/2 pkg. Sun Maid mixed fruit bits Saute onion in butter. Add rice, salt, broth, water and coriander. Simmer covered about 20 minutes. Add fruit bits and continue to cook over very low heat until dry and fluffy. Serves 4. Can be made ahead and reheated in low oven. Spices can be varied cardamon or curry powder are good, too. |
