TACO PIE
1 lb. lean ground beef
1/2 c. green onions, sliced
1/4 c. onions, chopped
1 pkg. taco seasoning mix
1 1/2 c. Jack cheese, shredded
1 (4 oz.) can green chilies, drained
1/2 c. buttermilk baking mix
1/2 c. yellow cornmeal
3 lg. eggs
1 1/4 c. milk
4 to 5 drops hot sauce
Garnish with black olives

Preheat oven to 400 degrees. Grease an 8 inch square baking pan. Cook beef and onions in skillet over medium heat, stirring once or twice, about 5 minutes until beef loses it's pink color. Spoon off excess fat and stir in taco seasoning. Spread beef evenly in prepared pan. Sprinkle with cheese and chilies. Put baking mix and cornmeal in a medium size bowl. Add eggs, milk and hot sauce. Beat with a fork or wire whisk until smooth. (Mixture will be thin.) Pour over beef mixture and bake about 25 to 35 minutes until top is browned and a knife inserted in center of topping comes out clean. Garnish top with olives and parsley. Let stand 5 to 10 minutes before cutting into squares.
