EGG SCRAMBLE CASSEROLE 
5 tbsp. melted butter, divided
2 tbsp. flour
2 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1 c. shredded process American cheese
1 c. chopped Canadian bacon
1/4 c. chopped green onion
12 eggs, beaten
1 (4 oz.) can mushroom stems & pieces, drained
1 1/2 c. buttered bread crumbs
1/8 tsp. paprika

Combine 2 tablespoons butter and flour, blend until smooth. Gradually stir in milk; cook until smooth and thickened, stirring constantly. Add salt, pepper and cheese; stir until cheese melts. Set aside.

Saute Canadian bacon and onion in 3 tablespoons butter, until onion is tender. Add eggs; cook until set, stirring occasionally to scramble. Fold in mushrooms and cheese sauce. Spoon egg mixture into a lightly greased 12"x7"x2" baking dish; top with bread crumbs and sprinkle with paprika.

Bake in a 350 degree oven for 30 minutes. Makes 8 servings. NOTE: May be prepared ahead and refrigerated until time to bake.
