CHOP CHEI 
1/2 lb. beef, cut into 2 x 1/2 inch slices

MARINADE FOR BEEF:

1 tbsp. soy sauce
1 tsp. sesame oil
1 tsp. sugar
Dash of black pepper
1 chopped scallion
1 clove garlic

1 onion, shredded 1/2 lb. Chinese cabbage, shredded 1/2 c. sliced mushrooms 1/2 tsp. salt 1/2 c. cellophane noodles 4 oz. fresh spinach 1 scallion, chopped 1 tsp. sugar 1 tsp. soy sauce 1 egg, shredded

In oil, stir fry carrots and onion, then cabbage and mushrooms. Sprinkle salt. Remove. Stir fry beef and add sugar and soy sauce. Add stir fried vegetables, noodles, and spinach last. Add egg shreds for garnish. Sprinkle 1 teaspoon of sesame oil over top.
