SPANISH RICE 
4 tbsp. shortening
1 c. rice, uncooked
1/2 onion, chopped
1 can tomatoes #303
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
Chili powder, if desired
3 1/2 c. water, cold

Fry rice in shortening until slightly toasted. Then add onion and tomatoes. Cook for 1 minute. Add seasonings. Add water and cook until tender for about 30 minutes. Serves 4-6.
