POTATO SOUP WITH GROUND MEAT 
1 to 1 1/2 lbs. ground chuck
1 onion
3 qts. cold water
5 lg. potatoes, cubed
3 carrots, cubed
3 stalks celery, cut fine
1 to 1 1/2 c. cabbage, shredded
2 tbsp. barley (optional)
2 tbsp. rice (optional)
2 tbsp. mushrooms, cut into sm. pieces (optional)
Salt to taste
3/4 tsp. marjoram

THICKENING:

2 tbsp. butter
2 to 3 tbsp. flour

Brown over low flame.

Brown ground chuck with onion and place into a large kettle. Add all the other ingredients, except the thickening. Cook for 1 to 1 1/2 hours--then blend in thickening.
