SPINACH SALAD 
1 lb. washed, packaged spinach
1 tsp. grated onion
1/2 tsp. salt
2 hard cooked eggs
4 slices deiced bacon
4 tbsp. cider or malt vinegar
2 tsp. sugar

Wash spinach and trim. Dry. Chop quite fine. Add onion and salt. Toss lightly with chopped egg and bacon dressing. (Fry bacon slowly until crisp. Add vinegar and sugar and mix well and pour over prepared spinach.) Serves 4.
