ORANGE TERIYAKI CHICKEN 
Serves 8.

1/4 c. reduced-sodium soy sauce
3 tbsp. chopped onion
2 cloves garlic, minced
1 tbsp. olive or canola oil
1/2 tsp. freshly ground pepper
1/2 tsp. ground ginger
1/2 tsp. red pepper sauce
1 can (6 oz.) orange juice concentrate
2 broiler-fryer (2 to 2 1/2 lbs. each), cut in serving pieces

In a bowl, combine all the ingredients except the chicken. Place the chicken pieces in a large bowl. Pour the orange juice marinade over the chicken. Marinate at least three hours, turning once, in the refrigerator.

Grill 4 to 6 inches from the heat source for 35 to 40 minutes, turning and basting with the marinade frequently.
