GRANDMOM'S RICE PUDDING | |
1/2 box raisins (6 oz.) 1/2 box long cooking rice (8 oz.) "Carolina" 1/2 gal. milk 3/4 c. sugar 1/2 bottle vanilla extract (1/2 fl. oz.) 1 egg In a small bowl, soak raisins in warm water; set aside. In 3 quart pot put rice, fill pot 1/2 way with water. Bring to a boil, simmer and stir until all water is absorbed. Add milk, simmer 20-25 minutes, stirring frequently. Remove from heat. Stir in sugar; drain and add raisins. In small bowl beat egg and vanilla extract together. Stir in when pudding is completely cool (if desired add more milk). Refrigerate and serve cold. Makes 3 quarts. |
