COUNTRY FRIED STEAK 
Beef round (trimmed & cubed) or 4-5 cube steaks
Salt & pepper if desired
1 tbsp. shortening
Flour

Dredge in seasoned flour and fry quickly in hot fat until golden brown. Add 1/4 cup of water to skillet, cover and let simmer until tender. (Approximately 45 minutes.) Serve with cream gravy. Makes 4-5 servings.

CREAM GRAVY:

4 tbsp. drippings (from steak)
2 c. milk (warm)
1/4 tsp. pepper
4 tbsp. flour
Salt to taste

Simmer together; do not brown (about 10 minutes). Lower heat and add milk. Cook until smooth, stirring constantly.
