COCONUT CREAM PIE | |
3/4 c. sugar 1/3 c. flour 1/4 tsp. salt 2 1/2 c. milk 3 slightly beaten egg yolks 2 tbsp. butter 1 tsp. vanilla 1 c. coconut 1 (9 inch) baked pastry shell MERINGUE: 3 egg whites 1/2 tsp. vanilla 1/4 tsp. cream of tartar 4 tbsp. powdered sugar Dash of salt Combine sugar, flour and salt in a saucepan. Gradually stir in milk. Cook over medium heat or in the microwave until bubbly. Remove from heat. Stir small amount of the hot mixture into yolks. Immediately return to hot mixture and cook 2 to 3 minutes longer, stirring constantly, if not using a microwave. Remove from heat and add butter, vanilla and coconut. Pour into baked pastry shell. Top with meringue and sprinkle with coconut. Bake at 350 degrees for 12 to 15 minutes until meringue is lightly browned. |
