FRUIT COCKTAIL CAKE | |
2 c. flour 2 tsp. baking soda 1/2 tsp. salt 2 eggs 1 1/2 c. sugar 1/4 c. brown sugar 1/4 c. chopped walnuts TOPPING: 1/2 c. evaporated milk 1/4 c. butter 3/4 c. sugar 1/2 c. walnuts 1 tsp. vanilla Sift together flour, baking soda, salt. Beat until light eggs, adding sugar (granulated) gradually, add dry ingredients alternately with one can fruit cocktail (undrained). Mix until smooth. Pour into 13x9 pan. Combine 1/4 cup firmly packed brown sugar with 1/4 cup chopped walnuts and sprinkle over cake batter. Bake in 350 degree oven for 30 to 35 minutes. While cake is baking cook over medium heat evaporated milk, butter and sugar. Cook until slightly thick. Remove from heat. Add 1/2 cup walnuts, chopped, 1 teaspoon vanilla. Mix well and pour over cake as soon as removed from oven. Yummy, moist, easy to make cake!! |
