CITRUS ZUCCHINI BREAD 
2 c. sugar
1 c. oil
4 eggs
4 tbsp. lemon peel
1 tsp. orange extract
3 c. flour
4 tsp. baking powder
1 tsp. baking soda, baking
1 tsp. salt
1/4 tsp. ginger
3 c. shredded zucchini

Beat eggs, sugar, oil, extracts. I add teaspoon lemon juice to peel. Add dry ingredients; fold in zucchini. Divide into 2 loaf pans. Bake at 350 degrees for 55 minutes. Nice texture. Good aroma and taste.
