LEMON ZUCCHINI BREAD 
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1/8 tsp. nutmeg
1/8 tsp. ginger
1/2 c. chopped nuts
1/2 c. cooking oil
2 eggs
Grated peel of lemon (1/2 tsp. lemon extract)
1/2 tsp. orange extract
1 generous c. grated zucchini (peeled or unpeeled)

Sift together all dry ingredients except sugar. Set aside. Beat sugar, oil, eggs, lemon peel and orange extract. Add flour mixture alternately with zucchini. Fold in nuts and blend well. Pour into greased 9 x 5 inch loaf pan and bake at 350 degrees for 55 minutes. Cool in pan 15 minutes before turning.
