LEMON ZUCCHINI BREAD 
1 3/4 c. flour
2 1/4 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar
1 tsp. grated lemon rind
2 eggs, beaten
1 c. zucchini, grated
1/2 c. nutmeats, broken

Preheat oven to 350 degrees. Sift flour, baking powder and salt. Blend shortening, sugar and lemon rind. Beat eggs into mixture, then add zucchini. Add sifted ingredients, then nuts. Put into buttered bread pan. Bake 45 to 60 minutes until done. Cool before cutting. (I have seen children eat 1/2 warm loaf in one sitting, especially if they don't know about the zucchini.) Freezes well.
