CHERRY MALLOW PUDDING 
1 1/2 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. sugar
1/3 c. shortening
2 c. drained red sour cherries
1 egg
2/3 c. milk
1 tsp. vanilla
12 marshmallows
1/2 c. pecan pieces

Sift flour, baking powder, salt and sugar together. Cut in shortening until mixture is like coarse crumbs. Add slightly beaten egg, milk and vanilla. Mix all thoroughly. Stand 6 whole marshmallows on bottom of a well greased 1 1/2 quart casserole dish. Arrange 1 cup of the cherries around the marshmallows, sprinkle with 1/4 cup of the nuts. Spread half of the batter over all. Repeat with the marshmallows, cherries and nuts and spread the remaining batter on top, letting a few marshmallows and cherries show through the top of the batter. Bake at 300 degrees for about 1 hour and 20 minutes. Serve with cherry sauce.
