CHEESY POTATOES 
1 lg. onion, chopped
6 slices bacon, chopped
20 mushrooms, diced
5-6 lg. carrots, sliced
8-10 baked potatoes
1 can cream of chicken soup
1 can cream of mushroom soup
1 pt. sour cream
1 1/2 to 2 c. shredded Cheddar cheese

When potatoes are through baking, place them in cold water to cool, then peel and cube them. Saute onion, bacon, mushrooms, and carrots in skillet until carrots are tender. Add sauteed vegetables to potatoes along with soups, sour cream, and cheese.

If you have it, put in couple shakes of liquid smoke. If you don't have it, the recipe is good anyway. Place in a large baking pan or 12-inch Dutch oven and bake at 375 degrees about 30 minutes.
