SPARERIBS ORIENTAL | |
4 1/2 lbs. pork spareribs, cut into 4 rib sections 2 tsp. salt 2 1/4 inch slices ginger root, cut into thin strips 1 c. sugar 3/4 c. soy sauce 1 tsp. freshly ground pepper 1 c. ketchup 1/3 c. oyster sauce Place spareribs in a large saucepan. Add salt, pepper, ginger root, and enough water to barely cover ribs. Cover, bring to a boil, and simmer over low heat (about 200 degrees) for 1 hour. Remove ribs and drain thoroughly; place ribs in a large, shallow baking dish. Combine remaining ingredients and pour over ribs. Refrigerate to marinate overnight, turning several times. Heat oven to 325 degrees. Remove ribs from marinade; reserve marinade. Line a baking dish with aluminum foil and place ribs on foil. Bake, uncovered, 45 minutes, brushing occasionally with some of the marinade. Turn ribs and continue to bake 45 minutes longer, brushing occasionally. To serve, cut into 1 rib sections. Makes 4 servings. |
