GREEN BEANS WITH ZUCCHINI AND
BACON
 
1 1/4 lbs. fresh green beans (can use 2 - 9 oz. boxes frozen, cook only for 1/2 of the time)
4 slices bacon, coarsely chopped
1 tbsp. oil
2 c. zucchini, 1/4" slices
1/2 c. finely chopped onion
1/4 tsp. thyme
1/8 tsp. salt
1/2 tsp. pepper

Wash and snap green beans, steam for 3 to 4 minutes. Drain and set aside in a covered bowl.

In a large skillet, saute the bacon until crisp. Remove with slotted spoon and set aside. To skillet add enough additional oil to make about 3 tablespoons of fat. Add onions, zucchini and thyme. Cook over medium heat until the zucchini is tender crisp, about 4 minutes. Stir in beans and bacon, season with salt and pepper and cook 1 minute longer or until the beans are heated through.
