HOMER'S MEATBALLS AND SPAGHETTI
SAUCE
 
2 lbs. ground chuck or 1 1/2 lb. chuck and 1/2 lb. pork
3 cloves garlic, minced
3 tsp. salt
1 tsp. pepper
1 c. soft bread crumbs
1/2 c. Parmesan cheese
2 eggs
1 tbsp. parsley (optional)

Combine all ingredients and mix well. Shape into balls of desired size. Bake on sheet pan 1/2 hour at 350 degrees. If above mixture seems heavy or tight, add milk to desired consistency.

SAUCE:

1/3 c. oil
2 cloves garlic
1 lg. onion
1 (12 oz.) can tomato paste
1 lg. can pear tomatoes
1 lg. can hot water
4 tsp. salt
1 tsp. pepper
1/2 tsp. sage
2 bay leaves
1/8 tsp. anise seed

Into oil, saute garlic and onion until transparent. Add tomato paste; stir and mix well. Add rest of ingredients. Stir well, simmer 45 minutes; add meatballs and simmer slowly as long as desired, stir occasionally.
