SODA CRACKER PIE | |
Beat 3 egg whites very stiff. Fold in 1 cup sugar and 1/2 teaspoon baking powder. Using electric mixer, beat in 14 crushed soda crackers. Stir in 1/2 cup broken pecans. Bake 35 minutes in 325 degree oven in a greased 9 inch pie pan. Cool. Slice a layer of fresh peaches over the top. Cover with 1 cup of whipping cream that is whipped and sweetened. Chill. (Be sure peaches are completely covered.) You may freeze this crust for later use. |
