CAROLYN'S CHOPPED SALAD WITH
PARMESAN DRESSING
 
1/2 head iceberg lettuce, chopped into bite-sized pieces
1 small head romaine lettuce, chopped into bite-sized pieces
1 lb. Italian salami, finely diced
1 cup shredded Mozzarella cheese
1 (8 oz.) can garbanzo beans (chick peas), drained and rinsed

Combine ingredients in a glass bowl and chill.

PARMESAN DRESSING:

5 tbsp. vegetable oil
2 tbsp. white wine vinegar (or white vinegar)
1 tsp. dry mustard
1 tsp. salt (optional)
1/2 tsp. black pepper
1/2 cup grated Parmesan cheese

Combine ingredients in a cruet or jar with a tight fitting lid; shake well.

Pour dressing over chilled salad just before serving and toss lightly. Serve immediately.
