SCALLOPED CHICKEN OR TURKEY 
2 c. chicken broth
2 tbsp. flour
2 tbsp. chicken fat or butter
Salt & pepper
Bread crumbs
2 c. diced cooked chicken
2 c. sliced cooked potatoes

Thicken broth with paste made of flour and fat, then season with salt and pepper to taste. Fill baking dish alternately with layers of bread crumbs, chicken, potatoes, cover top with crumbs. Add gravy or top with a few bits of butter and bake in 350 degree oven for 30 minutes. Serves 5.
