APPLESAUCE OATMEAL MUFFINS 
1 c. old fashioned oatmeal
1 c. applesauce
1 lg. egg, beaten
1 tsp. vanilla
4 tbsp. vegetable oil or melted butter
1 tsp. double acting baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 c. milk, orange or apple juice (or frozen concentrate)
3/4 c. whole wheat flour
1/3 sugar (optional)
1/2 c. cranberries, dried cranberries or raisins (optional)

Spray 12 (3 inch) muffin cups with non-stick spray or use paper muffin liners.

Preheat oven to 375°F.

Stir together the oatmeal, applesauce, juice or milk, egg, vanilla and oil or butter. Set aside.

Stir together the flour, baking powder, baking soda and cinnamon. Make a well in the center, and add the applesauce mixture. Stir until well combined, but do not over beat.

Add raisins or cranberries if desired. Pour into the muffin pan filling each cup until 2/3 full.

Bake 15-20 minutes, or until a toothpick inserted in center comes out clean.

Cool on a rack for 15 minutes before removing muffins.

Makes 12 muffins.

Variation: Substitute 1/4 teaspoon ginger and 1/8 teaspoon nutmeg for the cinnamon.

I made these with steel cut oats, which made them super nutty/chewy - probably not to everyone's taste. (I added 1/2 a cup more flour b/c the sc oats didn't absorb as much liquid.) I also added 1/2 a bag of mini-chocolate chips, which makes these a bit like big, yummy oatmeal chocolate chip cookies. (For my version, total calories per muffin are 225.)

I actually made a cake instead of muffins, and it turned out wonderfully. I used a glass 8x8 baking dish and baked for about 30 minutes (same temperature). It was incredibly moist and delicious. Great recipe!

A very oat-ey muffin. Best if you up the spices (I like to almost double them) and add lots of dried fruit.

I used quick oats instead of old fashion ones. I also used only 1/2 c white sugar and 1/4 c brown sugar for the remaining sugar. I left out the raisins and nuts, so my muffins were just soft and warm which is what I wanted at the time. Very easy to make. They came out perfectly moist and very tasty. I'll most definitely be making them again.

My family and I LOVE these muffins, I follow the recipe excactly except using a homemade chunky applesauce and whole wheat flour. I double the recipe and make mini-muffins; they are so good warm my kids gobble them up FAST!

These came out moist and with lots of delicious texture. I used canola oil, brown sugar, milk, and dried cranberrie. I also added some walnuts. I will be making these again and again.
