BROCCOLI WITH CHEESE SAUCE 
1 bunch broccoli
1 tsp. salt
Pinch of pepper
2 tbsp. butter, softened
2 tbsp. flour
1 c. milk
1 c. shredded American cheese

Separate broccoli into spears, removing large leaves and tough stalks. Place in large saucepan with a 1/2 inch in boiling water, salt and pepper. Simmer cover for 10-12 minutes or until tender. Blend butter and flour in saucepan. Stir in milk. Cook until thickened, stirring constantly. Add cheese. Cook until cheese melts, stirring constantly. Serve over drained broccoli. Yields 4-6 servings.
