ITALIAN STYLE ZUCCHINI &
TOMATOES
 
4 tbsp. olive oil
1 lg. zucchini
1 can diced tomatoes
1 onion, diced
1 clove garlic, chopped fine
2 tbsp. basil
Salt & pepper to taste

In skillet, saute onion, basil and garlic in olive oil. Add sliced zucchini. Cook al dente. Add tomatoes. Salt and pepper to taste.
