RICE WITH HAM, PEAS AND CHEESE 
1 lb. cubed, cooked ham
2 tbsp. butter
1 lg. chopped onion
1 1/2 c. cooked long grain rice
1 (10 oz.) pkg. frozen peas
3 c. chicken or beef broth
3/4 c. Parmesan cheese, grated
Salt and pepper

Cut ham into cubes. Set aside. Melt butter in pan. Add onion and saute for two minutes.

Stir in rice. Add ham and frozen peas; then add broth. Bring to a boil, stir once, cover and simmer.

Cook 20 minutes. Rice should absorb liquid. Fold in Parmesan cheese. Add more butter if needed. Salt and pepper to taste. Serve hot.
