RHUBARB PIE 
Approx. 2 c. rhubarb, chopped into bite size pieces
1 c. sugar
4 tbsp. flour
3 eggs

Place rhubarb into a pot. Pour boiling water over it. Rhubarb should be covered with water. Put lid on pot and let it sit for 30 minutes. Drain off the water. Add rest of ingredients to rhubarb. Mix well with a spoon. Then pour mixture into an unbaked pie crust. Bake at 350 degrees for approximately 40 minutes, until knife inserted in the middle comes out clean.
