SWEET AND SOUR BEEF 
1 lb. ground beef
1/3 c. thinly sliced carrots
1/3 c. diced pineapple
1/3 c. pineapple juice
2 tbsp. brown sugar
1 tsp. soy sauce
1/4 c. vinegar
1/2 tsp. pepper
2 tbsp. cornstarch
1 1/2 c. green peppers cut in 1/2 inch strips

Brown ground beef and drain off fat. Add carrots and cook over medium heat 3 to 4 minutes. Add pineapple, pineapple juice, brown sugar, soy sauce, vinegar and pepper. Allow to heat through. Add cornstarch, stirring constantly until mixture thickens. Put peppers on top. Turn to low heat, cover and simmer 5 to 6 minutes. Serve over cooked noodles or rice.
