GERMAN APFEL CAKE 
1/2 c. (1 stick) unsalted butter, melted
1 c. sugar
2 eggs
1 c. flour
1 tsp. baking powder
1 tsp. vanilla
1/2 c. sugar
1 1/2 tsp. cinnamon
4-5 tart lg. apples

Preheat oven to 350 degrees. Grease 8 x 8 square baking dish. Combine butter, sugar, and eggs in large bowl of mixer and beat thoroughly. Add flour, baking powder, and vanilla and beat until well blended.

Spread evenly in baking dish. Combine sugar and cinnamon. Peel and core apples and thinly slice into large bowl. Add sugar-cinnamon mixture to apples, coating apples thoroughly. Arrange slices on top of batter and press lightly. Bake 1 hour. Cool and cut into squares.
