SPINACH CASSEROLE 
1 1/2 c. Rice Chex cereal, crushed
1 tsp. onion powder
3 tbsp. butter, melted
8 oz. cream cheese
1 c. evaporated milk
2 tsp. lemon juice
3/4 tsp. seasoned salt
Dash of pepper
1/2 c. sliced canned mushrooms, drained (reserve 1/2 c. liquid)
1 egg, well beaten
10 oz. frozen spinach, drained

Combine cereal, onion powder and butter. Set aside. Combine cream cheese, milk, lemon juice, seasonings and mushroom liquid. Cook over low heat until smooth. Add egg, stir until thick. Remove from heat; stir in mushrooms and spinach. Pour into a greased 1 1/2 quart casserole. Cover with crumbs. Topping will be thick. Bake at 350 degrees for 15 to 20 minutes. 8 servings.
