KAHALA'S "FRESH" PEACH COMPOTE 
2 tablespoons corn starch
1/4 tsp nutmeg
1/4 tsp cinnamon
3/4 cup dark brown sugar
3/4 cup water
4 or more cups fresh or frozen peaches
1 tablespoon lemon juice
1 tablespoon butter
1 tsp quick tapioca

Set aside fruit, butter and lemon juice and tapioca Combine all remaining ingredients in medium size sauce pan and bring to boiling. Cook until thickened, about 5-7 minutes. Add fruit, lemon juice and butter. Continue to cook until thickened. If mixture is too thin, you may add the reserved tapioca and continue to cook for 2-4 minutes.

Allow to cool.

Serve over ice cream, pound cake or anything that strikes your fancy.
