CREAM OF BROCCOLI SOUP 
4 c. chicken broth (canned or 4 bouillon cubes and 4 c. water)
1 bunch broccoli, about 1 1/4 lb.
1 sm. onion, 1/2 c. chopped fine
3 tbsp. butter
4 tbsp. flour
1/8 tsp. nutmeg
1/4 tsp. celery salt
1 c. light cream
Salt and pepper LAST to taste

Chop broccoli into small pieces, set aside. In large saucepan, put butter and cook onion over medium heat (saute) for 3 minutes. Sprinkle flour over onion mix and stir in broth and bring to boil (3 minutes). Add broccoli, celery salt and nutmeg. Stir well. Adjust heat so soup barely bubbles for about 15 to 20 minutes. When broccoli is done, add cream, salt and pepper before serving.
