ZUCCHINI PARMESAN 
2 tbsp. oil
1/2 c. onion, chopped
4 med. zucchini, coarsely chopped
1 (16 oz.) can stewed tomatoes
1/4 tsp. basil
1/3 c. freshly grated Parmesan cheese

Heat oil in wok. Add onion and zucchini. Stir fry about 1 minute. Add tomatoes and basil. Bring to a boil. Cover and steam 4 to 5 minutes or until zucchini is crisp. Stir in cheese. Stir fry 30 seconds.
