CURRIED CHICKEN SALAD 
3 c. cubed cooked chicken
1 c. celery, diced
1 tart apple, diced
1 can (11 oz.) mandarin oranges
1/2 c. finely, chopped macadamia nuts
1 c. mayonnaise
2 tsp. curry powder
1 tsp. salt
1/4 c. crumbled Blue cheese

Combine chicken, celery, apple, mandarin oranges and macadamia nuts. Stir together mayonnaise, curry powder and salt. Toss with chicken mixture. Sprinkle Blue cheese over top. Chill and serve. Serves 6.
