TUNA RICE MEDLEY 
4 tbsp. butter
2 unpared med. apples, cored & chopped (2 c.)
1 c. chopped celery
1/2 c. chopped onion
1 can condensed cream of vegetable soup
1 c. milk
2 (6 1/2 or 7 oz.) cans tuna, drained
2 c. cooked rice
1/2 tsp. salt
Dash of pepper
2 tbsp. butter, melted
1 c. crisp rice cereal squares, coarsely crumbled
1/2 tsp. curry powder

In large saucepan, melt the 4 tablespoons butter; add the apple, celery and onion. Cook until tender but not brown. Add soup, gradually stir in milk. Add tuna, rice, salt and pepper; mix well. Turn into greased 2-quart casserole.

Combine the 2 tablespoons melted butter, the crushed cereal and curry powder; sprinkle over the top. Bake uncovered in moderate oven (375 degrees) for 30 minutes or until heated through. 6 to 8 servings.

(I substitute cream of mushroom soup for soup, and 2 cups (tightly packed) cut-up cooked chicken for tuna.)
