RED BEANS AND RICE 
1 lb. red kidney beans
1 lg. onion, chopped
5-6 strips bacon, fry, cut in squares
Reserved bacon fat
Parsley
Sausage as desired
Garlic
Salt and pepper to taste
1 bay leaf
Pinch (1/2 tsp.) sugar

Soak beans overnight in bowl of water. (If time doesn't permit, soak for at least 2 hours.) Drain. Add clean water in pot with beans to cover by about 2 inches. Add onion. Cook at slow boil for about 1 hour. Add remaining ingredients. Slow cook another hour. Serve over cooked rice.
