1 chicken, cleaned and cut up into serving pieces 1 medium size onion, chopped 1 head garlic, separated into cloves 1 large can hominy (Juanita brand) chili California (for mild heat or chili arbor for stronger heat) to taste oregano (as needed) In a big pot, put chicken and water; enough to cover the chicken. Add half of the onion and garlic. Bring to a boil. Reduce heat to medium and continue to cook until halfway cooked. Add hominy and continue cooking until both chicken and hominy are tender. In another pot, put water and boil the chili in it and cook until tender. Remove from pot, cool and remove all the seeds. Put chili in the blender. Add oregano, salt and the remaining half of the garlic and onion. Blend, using the water from the chicken pot. When well blended, pour over meat and hominy. Serve hot. Good for 4 to 6 servings. |
