SPICY CHICKEN SALAD 
3-4 chicken breasts (skinless)
3 stalks finely chopped celery (greenish ends with leaves if desired)
1 small yellow onion, finely chopped
2-3 cloves garlic, finely minced
1 tbsp. lemon juice
mayonnaise (to moisten to your taste)
salt & white pepper, to your taste (can use black pepper)
1/2 to 1 tbsp. Tony's Cajun seasoning

Oil chicken breast with olive or good cooking oil and bake at 350°F just until done. Then remove chicken, cool and shred meat well. Add all other ingredients; season to your liking. Chill 2 hours and serve with your choice of crackers or as a sandwich.
