ALICE'S SWEDISH COFFEE CAKE
1 1/2 c. scalded milk
3/4 c. butter (or 1 2/3 sticks)
2 tsp. salt
1/2 c. sugar
1 tsp. cardamom (optional)
4 1/2 c. flour
2 cakes yeast
1 2/3 sticks softened butter or 3/4 cup
2 eggs

Add butter to scalded milk and cool. In large bowl, beat the eggs and add the sugar and salt. Beat in the milk and butter and cardamom. When mixture is lukewarm, add the crumbled yeast. Add the flour. Try to keep the dough as soft as possible to handle. Let the dough rise until double, about 1 1/2 hours.

Divide the dough in half and roll out to rectangle and spread with softened butter and sprinkle with sugar and cinnamon and roll as for jelly roll and place in pan. With scissors, cut part way through (about 1 inch apart) and lay in opposite directions. Let it rise and bake at 375 degrees F. for 30 minutes. Frost with glaze while still warm. Candied fruit and nuts may be added, if desired. For glaze, see recipe under doughnuts.
