TONGA TOAST 
Sour dough bread, very thickly sliced (3")
Banana, sliced
2 tsp. vanilla
1/2 tsp. nutmeg, ground
1 1/2 tsp. ground cinnamon
3 eggs, beaten slightly
1 tbsp. butter

For each slice of the bread per person, with a sharp knife make a slit on one side into the center of the bread forming a small pocket. Fill in that pocket with a small mixture of banana, nutmeg and 1 teaspoon of the cinnamon. Close the opening with a wooden toothpick.

Mix together remaining 1/2 teaspoon cinnamon, the vanilla and eggs in a pie pan. Dip the filled bread slices in egg mixture over entire surface and immediately place on a medium to medium high prewarmed skillet with the butter. Lightly brown both sides of filled bread. Serve warm with butter/apple butter, or powdered sugar sprinkled. Remove toothpick!
