GINGER PEARS 
5 lbs. hard pears
5 lbs. sugar
1/3 c. preserved ginger, cut in sm. pieces
3 c. water
3 lemons, juice & grated rind

Remove skin and cores from the pears and cut the fruit in slices lengthwise. Add water and cook the pears until they are tender. Add sugar and other ingredients and simmer the mixture until it is thick. Pour into clean, hot jars and seal.
