Toss 3 1/2 pounds firm Bartlett pears (about 8 large) peeled, halved lengthwise, cored, sliced, with 1/2-3/4 cup sugar to taste, 1/4 cup each all-purpose flour and minced crystallized ginger, 3 tablespoons lemon juice, 2 teaspoons grated lemon rind and 1/2 teaspoon cinnamon
Make 2 crust 9 inch pie. Put pears, etc. in bottom crust. Dot with butter. Add top crust. Make slits for steam. Make egg wash (1 egg beaten with 1 tablespoon water). Brush top crust. Bake at 450 degrees for 15 minutes on lowest oven rack. Reduce to 375 degrees and bake 40 minutes more.
