CARROT COOKIES 
2 sticks butter
1 1/2 c. brown or white sugar
3 eggs
2 c. grated carrots
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tbsp. cinnamon
Other spices if desired
1 tbsp. vanilla
1 c. milk
1 c. raisins
1/2 c. nuts

Cream butter and sugar together. Add eggs and milk. Stir well. Add carrots. Stir well. Mix dry ingredients and add. Stir well. Add raisins and nuts, mixing well. Make into balls and press down or drop from spoon.

Bake at 350 degrees for approximately 10 minutes. Press finger on center of cookie will pop up when done. They will not look real brown on top. A little brown on bottom. Do not over bake.
