CARROT COOKIES 
3/4 c. butter
1 c. grated raw carrots
1 to 3 tsp. grated orange rind
1/2 tsp. salt
3/4 c. sugar
1 egg
2 1/4 c. flour
2 tsp. baking powder

Cream the butter, beat in sugar, then add carrots and egg and blend well. Mix in the rind and dry ingredients. Drop by teaspoon on greased baking sheet. Bake at 375 degrees for 10-12 minutes or until cookies are delicate brown around the edges. Loosen from the pan while till warm, cool on wire rack, and store in airtight containers. These freeze well as does the unbaked dough.
