CARROT CAKE 
2 c. self-rising flour
1 tsp. cinnamon
3 c. grated carrots
2 c. sugar
1 c. Wesson oil
4 eggs
1 tsp. salt (omit if self-rising flour)
2 tsp. baking soda (omit if self-rising flour)

In blender mix oil, carrots (5 medium), eggs. Add to sifted flour, spices and sugar; mix well. Pour in cake pans and bake at 350 degrees for 30-35 minutes.

ICING FOR CARROT CAKE (3 layers) :
1 (8 oz.) pkg. cream cheese
1 stick butter
2 tsp. vanilla
1 box confectioners sugar

Mix all these ingredients and add 1 cup chopped nuts.
