INDIAN MEAL LOAF CAKE 
1 tea cup white sugar
1 qt. rich milk
2 oz. butter
1 tsp. salt
2 tbsp. cornmeal
3 eggs
1 tea cup good strong yeast

Mix 1 tea cup of white sugar with 1 quart rich milk and cut 2 ounces of butter, adding a teaspoon of salt. Scald this mixture, remove from fire, and add as much cornmeal as will make it of the consistency of thick boiled mush. Beat the whole thing very hard for 10 minutes, then set away to cool. Beat 3 eggs very light and stir into mixture, when it is about lukewarm. Add cup of good strong yeast and beat the whole thing another 10 minutes. Much of the goodness of this cake depends on it being long and well beaten. Have ready a cake pan with a stem, well greased, as the meal is like to stick. Put in the pan and set in a warm place to rise, about 2 hours. Then bake at 300 degrees about 1 1/2 hour or until done. Turn out on board face down. Serve hot with butter.
