DATE FILLED CHEESE PASTRIES 
1/2 c. butter
1/4 lb. sharp Cheddar cheese, grated
1 c. flour
1 (7 1/2 oz.) box dates, chopped
1/2 c. brown sugar
1/4 c. water

Cream butter and grated cheese together. Gradually add flour, mixing to soft dough. Chill in refrigerator at least one hour. Meanwhile combine chopped dates, sugar and water in a saucepan. Cook over low heat, stirring constantly until soft (about 5 minutes). Cool. Break off small portions of chilled dough. Roll into ball in palm of hand.

Flatten and place date mixture in finger shaped pieces in center. (Or make into small pie shaped pieces in center). Roll dough to cover mixture. Bake on cookie sheet at 350 degrees for 15 minutes or until golden brown. (Makes about 24 or 30 pies). Great for parties, teas and snacks.
